Pellegrino Artusi’s recipe by Casa Artusi: Risotto, a traditional first course from Milan

Until 1981, risotto was known and usually prepared in three Italian regions only: Piemonte, Lombardia and Veneto. Artusi, with 14 recipes dedicated to Italian #rice, included risotto in a national project for the integration of gastronomic cultures.
