When the lockdown was imposed, we were through the renovation works of our own culinary classroom. Works have restarted this week and we hope to be able to open it soon and popularize another fundamental aspect of Italian culture. While we are waiting for that moment, we are pleased to share with you some Italian recipes that can tell interesting stories that may help us thinking in a positive way towards the hardship moment we are living. Recipes inspired by times of great difficulty that compelled Italians to create new dishes.

Castradina is a dish invented in Venice during the plague of the 17th century. These days it is prepared each year on 21st November on the occasion of the Feast Day of the Madonna della Salute which commemorates the end of the plague.
